Blueberry Smoothie Chia Pudding


Ingredients:
1/2 cup frozen riced cauliflower
2 Tablespoons chia seeds
1/2 cup unsweetened almond milk – I prefer Califia Farms.
1/8 teaspoon vanilla extract
1/3 cup frozen blueberries

Instructions:
  • First step is Add the almond milk, chia seeds, and vanilla extract in a small jar. Shake to combine and place in the fridge to set for at least 2 hours, preferably overnight. Stir partway through to make sure chia seeds do not clump together.
  • And then, After the chia pudding is ready, place blueberries, cauliflower, almond milk and protein powder into your blender or food processor. Process until combined.
